Through the deck fuel tank options

Currently my boat has a single jockey console and has a through the hull fuel tank.

But I want to change the console to a wider one and also put in side by side seats. But this poses the problem with having half a fuel tank protruding through the deck bewtween the seats.

Does anyone know of a possible solution would it be best to leave the tank in place and build seats around it or remove the tank and turn the hole left by it in to storage etc etc....
