Doel Fins are a bit of a band aid solution. If they're curing it, I'd have to ask whether the chinewalking is actually the motor fishtailing?
There is a possibility of any V monohull to chinewalk once it's going particularly fast. Once the final set of spray rails are out of the water there is a tendency of the boat to start walking. More so on non padded bottoms.
Part of it is driving ability - it's a balancing act. The other part is setup of the boat. Steering slop, foot throttle (so you can steer with 2 hands), engine height, weight placement, etc.
The lazy mans approach is to trim in, or ballast the bow, but that's at the expense of top speed.
