Internal Fuel Tank. Zodiac 530

I am rebuilding a Zodiac 530 Pro.

I want to install an internal fuel tank. My thoughts are to build one in the steering console under the seat. I am thinking that i go for a Stainless Steel tank. I am also thinking about that i will laminate it to the hull with epoxy.

Any good advice here regarding to Plastic or Stainless steel ??
