For a 700kg 6.8m RIB what would be a sensibly sized auxiliary engine?

As Jeff says 1hp/mtr tends to work I'd probably look at an 8hp for that rig. A 2 stroke yam 8 would be a good option light enough to lift about & a punchy little engine
