I am refitting my transducer & chart plotter to another sib. As it's a V airdeck a lot of surplus transducer wire will be on top of the deck.
If I coil it and tie it with a couple of zip ties to make it neat and tidy, will that effect the performance/readings from the transducer?
I’ve done exactly the same, no issues. I have a piece of self adhesive Velcro stuck to the transom, the coil of spare cable has the corresponding bit of Velcro wrapped around it. You can guess the rest

I keep the extra tied up similar inside my current boats console, but used "zip" tie wraps and coiled it out of the way when I had a SIB. They make "zip" ties wraps with a screw hole which work awesome for locating wiring bundles.
I know the transducer should be mounted the on the starboard side of the transom (if the prop rotates clockwise) But has anyone fitted it to the port side?
Did it have any adverse effects?

In a simple as I can explain the port side water is more unstable than the starboad side (prop wash side) giving a less stable sonar reading so neagative pressure to positive broken water to solid water if you like
