Noland RS11 analog to NMEA2000 converter

Hi,
I plan to install a VHF in my console, problem is - no room for it If I remove the tachometer and move the switch panel it just might fit in.
The rpms will be displayed (hopefully) on my HDS7 through a Noland RS11 analog to NMEA2000 converter (NoLand Engineering.) This thing has got 4 analog and two pulse (tach) inputs. Any suggestions for the remaining four inputs?
The engine is a rather old Mercury 100 hp. I am considering a temperature reading, oil level, trim, charging current and perhaps cooling water pressure. At present there are no analog sensors fitted. Is there anywhere to fit a temperature and water pressure sensor at all?
