Good to see someone wanting to get their hands dirty!
You'll need to determine the exact age of your outboard and model so you can get the right service manual. I find a hard-copy manual easier to follow, than PDF downloads or CDs, as invariably you need to check diagrams and will end up printing the damn thing anyway!
This list is not exhaustive - but on most 2-strokes engines you'll need to perform period servicing on the following parts:
Replace impeller (waterpump gaskets, etc, if required)
Check and replace spark plugs
Renew starter rope (if manual pull)
Check electrics, connections
Check bolts, torque, etc.
Drain carbs, clean and adjust (if required)
Lube throttle and gear linkage (and grease nipples)
Drain and refill fuel filter, check fuel connections, primer bulb, etc
Clean or renew thermostat
Grease splined drive-shaft, propeller shaft
Check propeller, thrust bearing, renew split pin
Drain and renew gear oil
