How do I conect the battery to my 25Hp Mercury?

Just got a little Avon rib I have found that it has eletric starting. However the power cable has been removed and I don't know where to attach it.
I was told that the -ve is earthed and the +ve goes to the starter solenoid.

Yes that is right. Usually the negative bolts on the side of the starter motor and the positive fixes to the terminal on the stater solenoid usually found at the base of the powerhead area bolted to the housing.
