First attempt at homemade salami & chorizo. Very tasty but I think I’ve over dried it.

We made one batch of about 15kg & have enough seasoning left to make a similar amount. We used all the casings though & will have to buy more, but they’re cheap enough. You lose about 1/3 of the weight in the drying process. That’s about half of the finished product in the photo.

You need somewhere dark & airy for the first week with a temperature between 17-20C, for the following 5 weeks you need to keep the temperature lower, around 10-15C with quite high humidity. I struggled keeping the humidity up, hence the over drying. You might struggle in summer. Now would be a good time IMO.

We are still in the apple pressing game
this last week we picked and pressed a whole pick up truck load of apples and pears
right in the middle of the pressing our Vee Belt broke and had to redrill new mounting holes to fit the longer belt as the original (20 year old) wasn't available locally.
almost 800 L of Gravenstein apples juice --the good stuff

Hank - thanks for keeping the faith over the past few seasons when to be honest, I have failed to squeeze a single apple, for a variety of reasons. This year will be different and I very much hope to harvest and process the decent crop of cider apples that are currently ripening in the back garden.

I'll report back but again, keep the apple updates coming!

I thought with 370 hp you might have slipped off the end of the flat earth

we have a large orchard to pick maybe tomorrow if it isn't raining.
We have the picking crew ready and the lady processors are lined up
should be fun
