I think you may have over tightened them I put the castle nut on uptight then back off 1/4 turn.

If you have one shot nuts you have sealed for...

If you have one shot nuts you have sealed for life bearings which you are very unlikely to over tighten as they are quite different from tapered roller!

How have you stripped & checked them?
