I believe the offset is to counter prop torque but also to make room for a casualty to lie down on the military boats, as for the skiing, with a decent outboard it will tow a skier all day long!

I would give it a go, I think the shape of the hull also plays a part, with a deep V the cav plate can be higher than the bottom of the hull.
Mine is about 1 1/2 inches above but cannot go any lower...
