I use a nasty £3.50 Woolworth's coolbox to hold bait. The lid gets used as a cutting board.

They've put the price up now...it's 7.99

Just use a small / medium plastic kitchen chopping board, the kind with the cut-out handle at one end. Easy to wash off in the sea and easy to store aboard.
