Got 265/75R16's on the Disco and never had much trouble with the diffs catching.
Like you say much deeper than that and you should be in front of the fire!

Did they not also build the Toyota Hilux that Top Gear took to (nowhere near the actual) North Pole a couple of years back? That was a mean looking beast as well

Um, no. I think it was an Arctic Trucks job. Snorri and his bro, Steiner do mainly Landies. They are responsible for most of the Icelandic Landrover conversions.
