Engine height

Hoping to mount the Opti on the boat tomorrow so was looking for recommendations for height. Ribtec 5.85 and engine is a L shaft 150 Opti, previous engine was also a 150 and had to trimmed well in to get any grip in a turn. Props are either a 21" or 23" 3 blade Stainless.

Set up should be the same as the previous motor, if you're using the same prop.
If in doubt, start with the cav plate around 3/4" above the keel and see how it behaves there. Is the transom 21"?

It's a different prop the first was 19" alloy which slipped a lot and was under propped hence now a 21" stainless. Transom is 19"

Do you have enough scope on the original mounting holes to get the cav plate at the right height?

Yes, plenty of adjustment, particularly up, the lip of the engine bracket sits about 1" above the top of the transom.
